Show Us Your Life - Favorite Dessert


Fruit Salsa with Baked Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)

10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray
2 cups cinnamon sugar

1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes. 

2.Preheat oven to 350 degrees. 

3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter). 

4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.

Show Us Your Life - Favorite Main Dish


Spinach Lasagna Rolls

9 lasagna noodles, cooked 
1 (10 ounce) package frozen chopped spinach, thawed and completely drained 
1 container curd Cottage Cheese 
1/2 cup grated Parmesan cheese 
1 egg 
1/2 teaspoon minced garlic
1/2 teaspoon dried Italian seasonings
salt and fresh pepper 
1 lb ground beef or turkey browned and drained32 oz tomato sauce (I used spaghetti sauce)
9 Tablespoons part skim mozzarella cheese, shredded 

Preheat oven to 350°. Make sure you drain the spinach well. Combine spinach, cottage cheese, Parmesan cheese, egg, garlic, Italian seasonings, ground beef or turkey, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry by patting them with a paper towel. Take 1/3 cup of ricotta mixture and spread evenly over a noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
To serve, ladle a little sauce on the plate and top with lasagna roll.

Happy Birthday David!

I can not believe we are here at this moment again, as I try to look back over the past 6 years, tears begin to form in my eyes because I still can't believe God blessed me with YOU.  Today you are six, your are tall, you still have your beautiful dimples and gorgeous eyes, you have lost your first two teeth, and this year you became a big brother to a little sister.  You have a desire to explore the world and learn how to take it apart and put it back together again.  But the thing I love most about you is that you have a tender heart and a love for your family that shines in your face each and every time you look at us.  You are so gentle with your new baby sister and even though your little brother can be a stinker sometimes, you still want to hug him goodbye when you leave for school each day.

Show Us Your Life - Favorite Vacation Spot

Our favorite vacation spot is Myrtle Beach, South Carolina an easy four hour drive from us.  There is so much to do in MB, but our favorite place to stay is Dunes Village Resort.  Dunes Village Resort is so fantastic for our family because it offers a lot of on site amenities that we don't even have to get in the car. The resort offers from one bed studio size, all the way up to 4 bedroom condos that provide sleeping space for 16.  However, it also offers a perfect escape for the two of us when we travel down by ourselves to celebrate our anniversary or just get away. The resort is directly on the beach and offers rooms with fully equipped kitchen's, so you can prepare many or all of your meals directly in the room.
Dunes Village has an indoor water park, with slides, and a 250' lazy river, the complex also offers fun & games, kids activities, spa packages, and on-site restaurants.  You don't have to leave the resort, all of your vacation fun is right outside your room door.
When we do leave the resort, one of our favorite places to go is Broadway at the Beach, another location that offers so many things all in one place.  Shopping, Entertainment, the Ripley's Aquarium, Movie Theatre, and of course wonderful Dining Choices all within one large property surrounding a large lake. 
Finally, another thing we love to do when we are in Myrtle Beach is take in a dinner show, we have been to Medieval Times and the Dixie Stampede.  This year we are going down for our 10th anniversary in June, and I think I am going to get tickets to the new show taking the place of the Dixie Stampede at the cost of 11 million dollars in renovations, the Pirates Voyage.  We haven't completely decided if we are going to see the Pirates Voyage because this is a brand new show and we are not sure if we want to see a show in it's first month of opening when they may not have worked out all the kinks.  I will keep you posted and if we do go I will totally give you a review of our dinner and show experience.
So if your looking for a great place to vacation as a family or just as a couple, head for Myrtle Beach and take in the sun, fun, and shopping, you will love it!

Getting to Know You

1. did you watch the royal wedding?
Yes, my niece Hilary DVR'd the wedding and we got together with my other niece Cassandra and watched the wedding that evening with my parents.  It was wonderful to see the wedding and remember being in some of those very same places when I lived there with my family when I was 11.

2. tea and crumpets or coffee and a scone?
Tea and Crumpets

3. who's cuter..prince William or prince harry?
Prince Harry is much more adorable and boyishly charming.
4. can you speak in a English accent?
Yes, although I am sure a true Englishman would think I was butchering the English accent.

5. do you own a fancy hat?
No, but I sure do wish sometimes I had a place to wear some of the fancy hats we saw at the wedding.

6. would you rather live in a castle or an English cottage?
English Cottage surrounded by a beautiful wild english garden.

7. how old were you when prince Charles and princess Diana got married? were you even born? do you remember watching it?
Sadly I was 12 years old when they got married and I do remember watching it.

8. have you found your prince or are you still looking?
Yes and it will be 10 years this coming June
